Ingredients2 large eggs1 tsp store bought pesto1 slice cooked ham, cubed1 tsp skim milkDried basil leaves, for garnishNonstick cooking spraySpatulaMedium Skillet
Crack open the eggs in a small bowl. Using a fork, whisk together eggs, milk, and pesto.
Coat skillet with nonstick spray, and turn the stove to medium-high heat.
Pour in the egg mixture, allowing it to cook for 1 minute. Stir with the spatula, rotating the uncooked egg to the bottom of the pan. Add chopped ham.
Reduce heat to medium-low, cooking the eggs until they are to your liking (less for runny eggs; longer if you prefer them dry). Transfer to a plate and sprinkle with dried basil leaves.
