Need an energy boost to get through the day without coffee or energy drinks? Here’s a quick and simple way to make your own energy-packed breakfast, based on a “skinny muffin” recipe by New York Times best-selling author and fitness guru Jorge Cruise.
However, the original recipe is a little bland and dry, and taste shouldn’t be sacrificed while eating healthy. Here’s a sweeter spin on the recipe:
What you’ll need:
-A microwave-safe mug
-A plate
-1/8 cup of ground flaxseed
-1/8 cup of dried oats
-1 tsp of baking powder
-3 tsp of coconut oil (Coconut oil can be expensive, but it can serve so many purposes and is usually worth the purchase. Make sure to buy Extra Virgin coconut oil, which can be found in stores like Whole Foods or Sprouts).
-1 egg
-½ tsp of cinnamon
-1 packet (one gram) of Stevia (Stevia is a completely natural sweetener and an alternative to refined sugar. It’s also much sweeter, so be careful with how much you use).
-A small handful of dried cranberries (Optional)
-Honey
Put all of the ingredients, besides the honey, into your mug and stir until everything is thoroughly mixed. Microwave the mixture for about 50 to 55 seconds, take it out and turn the mug upside down over a plate. Once the muffin comes out, let it cool for a moment. Cut it in half, drizzle with some honey – the best part – to satisfy your sweet tooth and you’re good to go. There are plenty of ways to play around with this recipe since it’s only a single serving. Try adding some applesauce or very ripe bananas to shake up your morning routine, or take out a little of the coconut oil. Have fun with it and do what works for you.
