    Conquer The Kitchen: Green Eggs & Ham

    This week shout out “”Hip Hip Hooray””-

    To celebrate Dr. Seuss’ Birthday!

    And what about a birthday treat?

    Go fix yourself something nice to eat!

    Could you eat them in a box?

    Would you eat them with a fox?

    Get out your spatula and pan,

    And whip up tasty Green Eggs and Ham!

    Ingredients

    • 2 large eggs
    • 1 tsp store bought pesto
    • 1 slice cooked ham, cubed
    • 1 tsp skim milk
    • Dried basil leaves, for garnish
    • Nonstick cooking spray
    • Spatula
    • Medium Skillet

    Crack open the eggs in a small bowl. Using a fork, whisk together eggs, milk, and pesto.

    Coat skillet with nonstick spray, and turn the stove to medium-high heat.

    Pour in the egg mixture, allowing it to cook for 1 minute. Stir with the spatula, rotating the uncooked egg to the bottom of the pan. Add chopped ham.

    Reduce heat to medium-low, cooking the eggs until they are to your liking (less for runny eggs; longer if you prefer them dry). Transfer to a plate and sprinkle with dried basil leaves.
